Simple Egg Curry



Tomatoes give a special flavour and taste by themselves and also mixing with other vegetables and also non vegetarian.. Its like all in one..We can make normal tomato curry a little more colorful and special adding eggs..

 Ingredients :
Tomatoes – 250 gms
Eggs – 3
Onion – 1
Curry leaves – 1 sprig
Coriander leaves -2 sprigs
Ginger garlic paste -1 tsp
Turmeric -1/4 tsp
Red chillie powder-1 1/2 tsp
Salt – as required
Garam masala powder -1 tsp
Oil –  2 tbsp
Chop the onions and tomatoes into fine peices. Heat oil in a pan and fry the onions till soft and translucent.  Add curry leaves, turmeric  and ginger garlic paste and fry a little.  Add tomato peices along with required salt and mix well.  Cover it  and cook on medium heat till the tomato peices become soft. Now add half a cup of water and cook again till the tomatoes are completely cooked.  Now beat the eggs into the curry and cover it to  cook without mixing . When the egg is cooked mix it slowly with ladle  not to break the egg peices . Add garam masala powder and coriander leaves  , mix well and serve.  This curry is easy and fast to make . and is a good  combination with Rotis and also rice. Huby's Egg Curry

It's really relaxing by allowing ma huby to cook. . This curry of him, is damn delicious.. It's kinda easy . Give it a try!!!!

Eggs – 2 (Boiled and shelled and cut into 4 till halfway)
Onions – 2 (Sliced)
Tomatoes – 2 (Chopped)
Green Chillies – 2(Slit)
Freshly crushed Ginger Garlic– 1 tbsp (use store bought only if you have to)
Red Chilly Powder – 1 tsp
Coriander Powder – 1 tbsp
Turmeric Powder – 1/4 tsp
Meat Masala Powder – 1 tbsp
Curry Leaves – A sprig
Oil – as needed
Water – as needed
Salt – to taste

Heat oil in a deep pan and saute onions until translucent. Add green chillies and curry leaves and continue sautéing the onions till brown.Add chopped tomatoes and cook until pulpy and mashed. Add ginger garlic paste and fry for a minute till the raw smell goes off.
Add the powders, salt and saute for a few till the oil is seperates. Add 1 cup water to the and bring the gravy to a slow boil and then simmer it until desired consistency is attained.
Add the egg halves and cover it with the masala. Continue to simmer for a couple of minutes more and remove from heat.
Please remember that you must not cook the eggs in the masala for long as it tastes bad then. Garnish with coriander leaves if you have them (I didn’t).

Addition of eggs to the dosas will increase the protein content of the recipe. It is preferred if egg whites only are added so as to minimise the cholesterol intake. Eggwhites will make the dosas fluffy and light when beaten properly.

Egg Dosa
Ingredients : 
1 cup dosa batter( fermented paste of urad dal and rice)
 2 eggs, one for each dosa
1 onion finely chopped
1-2 green chillies finely chopped
coriander finely chopped 
black pepper powder,
salt to taste.
Method
In a bowl mix properly egg, chopped onion, coriander, green chilies, black pepper and salt.
Add salt to the dosa batter.  Heat a non stick tawa or griddle and add the dosa batter and spread like a normal dosa. Once the dosa is spread, pour the egg mixture over it like an omelet and let it cook on a low flame. Once the dosa base is done, turn it and let the egg cook properly.
It can be rolled like a dosa or can be served open with the egg side up.
Suggestions
You can serve with chutney or tomato ketchup. I made Pudhina(Mint) Kothamalli(Cilantro) thogayal(kinda Chutney).I will post the chutney in my next post.

Masala Bread Omelette

Masala Bread Omelette is another kid's friendly recipe. Normally many kids don't like plain bread. If you serve with cream they will eat cream and leave the bread,  similarly if you serve
with omelette they eat  omelette and leave the bread. So here's another way of making bread omelette which many kids definitely love.

Ingredients

Eggs : 2
Bread Slices : 4
Onion : 1 (Finely chopped)
Green Chilly : 1 (Finely chopped)
Cilantro : Finely Chopped
Salt : As per taste
Oil : 1 tsp

Method

Beat the eggs in a bowl, add chopped onions, green chilly, salt and mix well
Heat a tawa or pan, spread 1 tsp oil on it
Now pour the beaten egg mixture on the tawa/pan in round shape
Let the omelette roast for 2 minutes on slow flame
Take 4 bread slices and paste them on the omelette and roast for 1 more minute
Now turn the omelette other side and roast for 2 minutes
Yummy bread omelette is ready to serve
Divide the omelette into two halves (two bread slices on each half) and fold

  Some people calls this dish as EGG BURJI,  in andhra people calls as EGG PORUTU ,   and some other people calls as SCRAMBLED EGG. What ever u call, we  can tell it  is a universal favourite dish. It is very easy  to make and good combination with rice and  chapathi.

This is an easy egg fried rice recipe, Indian Style. Making Egg Fried Rice is not so complicated nor tedious process.When Chicken Fried Rice seem too tough you can ruffle this in no time. As always I normally make the vegetarian Fried rice first and then add the Scrambled Egg or Fried Chicken to the rice.  

I made this Egg Fried Rice couple of weeks ago for Sunday Lunch along with Vegetable Manchurian. Since this was the main course, I had to remove the portion for vegetarian before adding the scrambled eggs to it

We love this beautiful fusion that may not have much to do with typical Chinese food, but draws the inspiration from, to create this nation wide favorite.  Needless to say, (especially since I already spoke in length about it here), my world was almost shattered when I tasted the typical Chinese food here for the first time. Dimer kosha or Dry Egg Curry is a simple and easy to prepare recipe. I am very much fond of egg and this is one of  my favorite preparation with egg. We try to make different dishes to impress our family,my favorite is this.This is recipe I have used very less ingredients.

Serving Suggestion:This goes well with roti or any rice .
