This is an easy egg fried rice recipe, Indian Style. Making Egg Fried Rice is not so complicated nor tedious process.When Chicken Fried Rice seem too tough you can ruffle this in no time. As always I normally make the vegetarian Fried rice first and then add the Scrambled Egg or Fried Chicken to the rice.  

I made this Egg Fried Rice couple of weeks ago for Sunday Lunch along with Vegetable Manchurian. Since this was the main course, I had to remove the portion for vegetarian before adding the scrambled eggs to it

 


Ingredients

  • 200g basmati rice or 400g/14oz leftover cooked rice
  • 1-2 red chillies, deseeded and grated or very finely chopped
  • 3 garlic cloves, crushed
  • 1 tbsp sunflower oil
  • 2 large carrots, diced
  • 200g Chinese cabbage, finely sliced
  • 2 eggs, lightly beaten
  • 3 spring onions, sliced
  • 200g frozen peas
  • 1 tbsp soy sauce, plus extra for serving, if you like
  • Method

    1. If making the rice from scratch, cook it following pack instructions, then drain. Mix the chillies and garlic (in a pestle and mortar, if you have one) with a pinch of salt, to make a paste.
    2. Heat oil in a wok or large frying pan on a medium-high heat. Add the carrots and stir-fry for 5 mins until tender. Add the cabbage and chilli paste and cook for 1 min more. Tip in the cooked basmati or leftover rice and stir-fry for 1 min until piping hot.
    3. Push the rice mixture to one side of the pan. Add the eggs to the cleared space and scramble until set. Mix in the onions, peas and soy and stir-fry everything together until the peas are hot.

      Ingredients

      Basmati rice1 Cup (16 tbs)
      Olive oil2 Tablespoon
      Beans5 , chopped
      Carrot1⁄2 , chopped
      Chopped cabbage1 Cup (16 tbs)
      Capsicum1⁄4 , chopped
      Onions1⁄2 Bunch (50 gm), chopped
      Peas1 Cup (16 tbs)
      Soy sauce2 Teaspoon
      Vinegar1 Teaspoon
      Ajinomoto2 Pinch
      Pepper powder2 Teaspoon
      White pepper powder1⁄2 Teaspoon
      Salt To Taste
      Egg1

      Directions

      * Cook rice in rice cooker with 1cup rice:1 1/2 cup water along with salt.

      * Make scrambled egg with a tsp oil and a pinch of salt and a pinch of soy sauce.

      * Cut the vegetables as shown in the picture.

      * In a big pan pour oil, put the vegetables- carrot, cabbage, beans,capsicum,peas and 2 piches of ajinomotto and fry for 2 mins. Keep flame in medium.

      * Now put the spring onions, soy sauce, vinegar, salt a little, white pepper powder and fry till the vegetables are 3/4 th cooked.

      * Add cooked rice, pepper powder to this and mix all. Add the scrambled egg and mix.

      * Serve hot with any chicken or kurma item or as it is
