Egg Bhurji is a popular north indian breakfast recipe made from crumbled paneer. Bhurji means scrambled. So in this dish, the paneer aka cottage cheese is scrambled.
The whole dish is sauted onions-tomatoes with spices to which the boiled eggs are diced and added. Its a quick recipe which does not take much time to prepare. It can be served as a side dish.
There are other types of Bhurji recipes that we make in north india like Paneer bhurji, Matar paneer bhurji and mooli ki bhurji. All these bhurji recipes are quick to make and ideal for breakfast. Egg Bhurji and Paneer Bhurji are quite popular and served in most north indian dhabas (road side eateries).

Ingredients

  • 4 boiled eggs 
  • 1 tbsp oil  
  • 1 tsp chopped ginger  
  • 2 tbsp chopped carrot  
  • ¼ cup chopped onion  
  • ¼ cup chopped tomatoes 
  • 2 tbsp chopped spring onion stalk  
  • 1 tsp red chili powder  
  • ½ tsp turmeric powder  
  • 1 tsp garam masala powder  
  • Black pepper powder to taste 
  • 1 tsp chopped green chilies 
  • 2 tbsp green chutney  
  • 1 egg yolk 
  • Salt to taste 
For garnish 
  • Lettuce leaves as required 
  • 1 bun 
  • Chopped coriander as required 
  • Ketchup as required 
  • Boiled egg yolks as required

Method

  • Separate the boiled egg yolks and dice the egg whites. 
  • On a pan heat oil. Add chopped ginger, chopped carrot, chopped onion, chopped tomato, chopped spring onion stalk, red chili powder, turmeric powder, garam masala powder, black pepper powder, chopped green chili, green chutney, water and mix well. 
  • Separate egg yolk from one egg and add to the pan. Further add salt and mix well. 
  • On a plate place lettuce leaves and add the prepared boiled egg bhurjee on this. Garnish with chopped coriander and leftover boiled egg yolks.
  • Cut the bun and place lettuce leaves in it. Place this on the plate. 
  • Decorate the plate with ketchup. .
