Veg Baguette


Ingredients

2 part-baked baguette
1/4 red pepper, diced
1/4 green pepper, diced
198g can sweetcorn , drained
198g can green peas , drained
100g cheddar, grated
1 tbsp tomato puree
2 Cherry tomatoes
1-2 Broccoli florets


Method

  1. Heat oven to 190C/170C fan/gas 5. Halve the 2 part-baked baguettes lengthways and cook directly on the oven shelf for 8 mins. Meanwhile mix the diced peppers, sweetcorn, peas, broccoli, tomato and 75g of the grated cheddar.
  2. Transfer the baguettes to a baking tray, spread each with 1 tbsp tomato purée, divide the veg mix over, then sprinkle with the remaining grated cheddar. Bake for 12 mins until melting and golden.
