Poori with Aloo palya(potato mash) |
Poori with aaloo palya is one of my favorite
breakfast item. In South Indian restaurants it is one of the very common
thing served as breakfast.
If you do not want to have poori with palya, if you are a
non-vegetarian you can alternatively you can have it with paaya (I will
write paaya recipe some time soon) or if you are a vegetarian you can
try with my chana masala that i have posted as well.

Serving Suggestion : Its great for Breakfast.
Ingredients for Poori recipe:
Maida: 1/4 kg
Wheat flour (Aata): 1/4 kg
Oil: 1/4 kg
Ghee: 1 tsp
Salt to taste
Ingredients for Aaloo Palya recipe:
Potato: 1/2 kg
Onion: 3 large sized finely sliced
Tomato: 1 large sized finely chopped
Cumin seeds: 1/4 tsp
Mustard seeds: 1/4 tsp
Dry red chillies: 4 or 5
Oil: 2 tbsp
Curry leaves: 10 to 12
Whole black pepper: 1/2 tsp
Turmeric powder: 1/4 tsp
Method for making Poori:
Mix maida with wheat flour
Add entire ghee, salt and around 100 ml water (water is to make dough so add accordingly)
Mix all the above to create dough
Once the dough is ready create table tennis sized balls out of it
Then flatten (by pressing) the balls but don’t make it very thin
Now heat the entire oil in a deep pan (kadai)
Fry the previously flattened dough balls
This should create poories like the ones in the below picture
Method for cooking Aaloo Palya (potato mash):
Boil potatoes for 20 minutes on low flame
Let the potatoes become cold
Peel the potatoes
Mash them but ensure that it does not becomes paste
Heat oil in a pan
Add mustard seeds, cumin seeds, dry red chillies, black peppercorns and curry leaves
After half a minute add onions and fry it for 2 minutes
Now add turmeric powder and tomatoes
Stir for a minute and add salt
Finally add mashed potatoes and mix well and leave it for a minute
Now your palya is ready and should look similar to the second picture
Now your poories and aaloo palya are ready to serve. Remember poori is good only if you serve it hot.
