Carrot Halwa/Gajar ka Halwa
An Indian confection with Carrots


Gajar ka halwa, also known as carrot halwa or gajarela is a very popular Indian dessert recipe, made from grated carrots. It is very easy to make and it tastes amazing.
Traditionally the carrots used in the making of gajar halwa are sweet carrots (pinkish red color). They are abundantly available in the northern region of India especially during winter months. Hence, carrot halwa is often made in almost every house during that time.

Serving Suggestion: Serve warm, cold or chilled as a dessert on its own or with any vanilla ice cream





For Halwa:

Carrot --> 500gms(Peel the Skin off and shred them)
Butter --> 50gms
Sugar --> 100gms
Milk --> 200ml
Pinch of Salt

For Koya :

Milk --> 1Liter
Lemon -->1

Preparation:

* Switch the stove on. .Place two wide pans. . Pour Milk in one of them and Butter in the other
* Let the Milk come to boil and Let the Butter to melt.
* Put the shred carrot in the pan of butter and let it get cooked for 10 mins. .Pour the glass of milk,stir it and cover it with a lid. .It takes 5-7 minutes to cook. .Add sugar and a pinch of salt. .Perhaps,it oozes out water and u have to continue cooking for another 3 minutes.
*Add koya and mix them well for 3 more minutes. .Put the flame off. .
*Garnish them with almonds and raisins

Tips:
Doesnt matter what ever you prepare that tastes sweet,add a pinch of salt. .It enhances the taste of the dish.

Preparation of Koya:

* Cut the lemon and squeeze out the juice. .Add 1 spoon of water to one spoon of juice. .In the boiling milk,add 1 spoon of lemon juice and stir for 5 seconds. .Repeat the process until u see milk getting curdled. .
*Once you see the milk and water getting separated,switch off the stove immediately. .Take a clean cotton cloth and drain the curdled milk. .Hang it over for 10 minutes,and squeeze it well until the last drop of the water goes out. .The resulting product is called "panner"
*Now put the Panner on a plate and knit is as dough. .It will too soft and creamy. .
